Few days ago I got a very colorful giveaway from Bubbles - muffin silicon forms (thank you so much!) and just today I have had an occasion to use them. Tomorrow is my last day in my current work and as a good-bye and thank you for nice company to my co-workers I made raspberry muffins. I've always sucked in baking but the recipe I've found was a really easy and quick one, plus it's raspberry season right now and the muffins got perfect^.^ Partly it's also the merit of the 'magical' forms;) Inside there are whole raspberries so they're colorful there as well though I ate my 'check out' muffin and didn't take a photo of the inside and I can't eat any more because there wouldn't be enough muffins for tomorrow.
The recipe is from the Polish program Little Chef (source)
Ingredients:
- 2 glasses of flour
- 2/3 glass of sugar
- 2 tea spoons of baking powder
- 1/2 tea spoon of baking soda
- a pinch of salt
- 2/3 glass of buttermilk
- 2 eggs
- 85g of butter
- 1 and 1/2 tea spoons of vanilla extract
- 170g of raspberries
How to do it?
Mix flour, sugar, baking powder, baking soda and salt in a bowl. Melt butter. Add buttermilk to it and put away for 2 minutes. Pour butter and buttermilk to the bowl with the "dry" ingredients. Add eggs and vanilla extract and mix. Then delicately add raspberries. Put dough into muffin forms. Bake 18-20 minutes in 200 centigrades.
